Calorie counting and weight loss

Over the past few weeks I've done something I've never tried before. Firstly I've improved my diet, cutting out all refined sugars and going for more complex carbs. I have also recorded all my calories and also my weight each day. I began by limiting my intake to 3500 kcal per day, but have seen a steady loss in weight. I'm slowly increasing the calories (currently 3800 kcal per day) until I see the weight stabalise.
